    Maybe the most wonderful candy book I've ever read. Must buy a copy of the book now! Liz and Jen are candymakers in NYC (must go to their store!). Their "tell it like it is" approach is funny and only somewhat annoying at times. I don't think I'd be friends with them - they drink too much - but hey, who needs friends when you can make candy? This is a candy making bible. With lots of pictures and sidebars(not normal features in cookbooky bibles). Maybe the most wonderful candy book I've ever read. Must buy a copy of the book now! Making confectionery was always something that seemed otherworldly, beyond my non-professional skills as a home cook. While I was never a die-hard candy fanatic, I’m definitely guilty of polishing off a box of truffles or a giant slab of chocolate fudge cake – with a scoop of ice cream for good measure. Making confectionery was always something that seemed otherworldly, beyond my non-professional skills as a home cook. Then, I started seeing other self-professed home cooks taking on the task and I was sparked to try my luck at it. When I received The Liddabit Sweets Candy Cookbook by Liz Gutman and Jen King to review, it seemed like the planets had aligned. I spent hours combing through Liddabit, flagging treat after treat I would die to gorge myself on. With seven chapters ranging from gummies to caramels, lollipops and even my beloved chocolate, the 75 recipes each tempted and delighted me. With the December holidays approaching, Liddabit was also the perfect way to save a little money by making a few gifts rather than buying them. Now with Valentine’s Day around the corner, this book is a wonderful opportunity to best the box of chocolates and show your love how much you really care – or host an anti-Valentine’s party with a gaggle of single friends. On the topic of romance, the authors cleverly included a “Speed Date the Candies” chart (p. xiii), which was invaluable in my selection process. This chart lets the reader spot at a glance just which candy is ideal for your tastes, time and mood – be it boozy (like the Cherry Cordials, p. 85), gluten free (Agar Fruit Jellies, p. 109), shippable (Salty Peanut Taffy, p. 152) or quick to assemble (Five Minute Marzipan, p. 175). Information and tips critical for new candy-creators are covered in a thorough, friendly introduction. Each chapter also has a respectable amount of information and technique threading through it, but in no way does Liddabit read like a pastry school textbook. The authors include a wealth of photography (courtesy of Rachel Been) that illustrates the detail and beauty of candy production without in any way being gratuitous. Chocoholic that I am, I immediately gravitated to the second chapter of Liddabit – Chocolate Loves You and Wants You to be Happy. There was no shortage of temptations – I swooned over the Hip to be Squares (p. 99) made with sinful Nutella, and the Buckeyes (p. 72) called to my salty-sweet tooth. In the end, though, the sheer simplicity of the Salted Soft Chocolates (p.67) won my heart. I’m not a huge fan of the chalky, chewy “fake chocolate” Tootsie Roll, so I was concerned that these would be the same (the authors describe the texture as similar, and they do look like the store-bought candy). I needn’t have worried. The chocolates are made with only 5 ingredients, including 17 ounces of dark chocolate, and by choosing the quality and cocoa mass percentage the cook can thus control the outcome of the finished product. I used a blend of 70% and 65% chocolates, which was perfect for the adult set I was cooking for, but may be too intense for a child’s or milk-chocolate-lover’s palate. I did end up using slightly more salt than called for, but in no way were these “salty”, just well-rounded. It is a good thing this recipe makes a lot of candy (as do most recipes in Liddabit), as it is a bit of a process and required, I found, more time, tools and strength than alluded to. While it is in itself an easy recipe, bank on a good two days from start to finish, invest in a SilPat, bench scraper and sharp knife, and be ready to break out the muscle pain ointment after all the kneading, cutting and wrapping is done. The end result is more than worth it, being a hit with almost every age set (the youngest ones declared them too bitter), and it is a recipe I will keep in my arsenal for future holidays. The other recipe I tried out in Liddabit was Classic European Nougat (p. 145). Nougat, as well as the various national varieties like turrón and torrone, is a favourite confection with my Italian stepfamily, and I wanted to give them something special for the holidays. The book declares that this candy is “Worth It”, but I have my doubts as a non-crunchy candy fan. By the time I attempted this recipe (which takes a solid afternoon to make and can be expensive due to the nuts), I had become somewhat familiar with the candymaking process. For those just beginning a journey into confectionery, I would strongly suggest making marshmallows first, as nougat is effectively solidified marshmallow. I was prepared for the hot sugar syrup (readers note you will need a candy thermometer for most Liddabit recipes) and whipping of egg whites (you will need a stand mixer), and had my mise en place set out and organized. However, I was not prepared for how stiff the whipped mixture really gets and how sticky the finished mixture can be – the book’s direction to "stir the nuts" into the base sounds like a simple matter. In practice, the process was more like "try not to break your spatula / your arms". Being so stiff, as well as so hot (almost 300°F), getting it into an even layer in the pan required the speed of an Olympian and hands of asbestos. In terms of cleanup, the patience of Job and about an hour long shower finally removed the remaining sugar residue from all corners of the kitchen and my hair. Cutting it was one of the hardest things either my mom or I had ever experienced, even though I knew it was a hard candy it was definitely a two day, hammer and knife job. It was well received though, and lasts almost indefinitely in a cool, dry place, so if you have the patience and strength it is perfect for gift giving. While I can’t say for sure that Liz Gutman and Jen King will make candy as easy as flipping a switch with Liddabit Sweets Candy Cookbook, this book is definitely a stellar primer for the candy-curious. There is enough variety in the pages to allow both complete neophytes and experienced cooks to make professional looking confections with a little sugar, heat and elbow grease. I can’t wait to get the sweet kitchen back up and running – there are still 73 recipes I need to savour!

How to temper chocolate, how to pipe and drip and dip and drizzle, types of ingredients and equipment, the stages of sugar candies... all sorts of good stuff. And then you get to the really good stuff! But even through all the recipes, they still offer tips and substitutions and side bar ex An amazing candy making cookbook. I've tried 2 of the 70+ so far, and they've been successes. I loved the homemade marshmallows the most - they don't dissolve in my cocoa!! I can't wait to make a new batch and try adding some of flavors! I'm trying two more recipes this week for a cookbook book club, so will update when they turn out. Now, I won't ever try all the recipes. I don't enjoy all the steps so much to want to make my own Twist Bars, for example, even if they would be worlds better than the $0.75 Twix bars I could buy. Plus, making a big ol' batch of them would do no benefit to my waistline, and living alone, it's just too many for me. So, I'll stick with a lot of the simpler recipes and just use this as a reference book as needed. That alone still makes it worth the purchase price!

    Fan-ridiculous-tastic. This is an enthusiastic, delightful book on the secrets of candy making. It breaks down the science and technique in a humorous way, clear and accessible to the layperson. (Which, to be fair, I am not.) It's rare for me to give a book five stars before I've tried, but this one merits it; it even has a few tricks I didn't learn in culinary school. My only complaints are minor: the recipes aren't laid out well for photocopying (I like to have copies to work with so as not to Fan-ridiculous-tastic. This is an enthusiastic, delightful book on the secrets of candy making. It breaks down the science and technique in a humorous way, clear and accessible to the layperson. (Which, to be fair, I am not.) It's rare for me to give a book five stars before I've tried, but this one merits it; it even has a few tricks I didn't learn in culinary school. My only complaints are minor: the recipes aren't laid out well for photocopying (I like to have copies to work with so as not to dirty up the book; and let me note that this book freaked me out with its stylistic fake chocolate smears!); and sometimes, the humor tries too hard to be clever. There are several recipes from this I'm eager to try.

    Great and instructive book for experienced candy makers. Lots of instruction. However, I did not like the layout of this book. A recipe should not cover several pages of steps requiring turning the page. Especially not in candy making where speed is crucial. Too difficult to turn pages in the middle of important steps which can make or break the outcome.

All in all, it's a good recipe book for creating candies at home. I wavered between three and four stars, but opted for four because it is a very comprehensive book of recipes. The first section is has a nice description of various types of sugars, corn syrups, salts, flours, oil, vanillas, and other basic ingredients. All in all, it's a good recipe book for creating candies at home. I wavered between three and four stars, but opted for four because it is a very comprehensive book of recipes. The first section is has a nice description of various types of sugars, corn syrups, salts, flours, oil, vanillas, and other basic ingredients. They also tell you exactly the equipment you'll need to have. Unfortunately, they do say there are just a few "must haves" but then go on to list out many more things that seem imperative. It's at this point that they become a bit more heavy-handed in their instructions, swaying from the lighter tone of the earlier parts. The recipes themselves are broken down into chocolates, gummis, creamies, crunchies, and then a final section which is apparently about parties, but strangely (for a candy cookbook) goes into cake and frosting recipes. I wish there were more, or larger, photos of the final products, but it's not a "photography" cookbook, it's a recipe book. There are nice instructional photos along with most recipes, although they are a bit small. I look forward to trying a few of the recipes, but I admit, I do feel a bit more nervous about candy-making than I thought I would. It seems a little tricky!

Liz and Jen write their directions so you feel they are standing in the kitchen with you. And all is told with complete irreverence to the fine art of candymaking! Wonderful candy recipes for chocolate, hard candy, candy bars and more are totally broken down to the basic instructions with photos of how to do the specific mixing and cooking steps This cookbook is for everyone who says they can’t possibly follow directions because they don’t understand what the directions are saying to begin with. Liz and Jen write their directions so you feel they are standing in the kitchen with you. And all is told with complete irreverence to the fine art of candymaking! Wonderful candy recipes for chocolate, hard candy, candy bars and more are totally broken down to the basic instructions with photos of how to do the specific mixing and cooking steps. Ingredients are defined and told why they are important. Equipment and its use is explained and shown. Plus Liz and Jen give you permission to fail before you even start! Choose a candy and give it a try! I bet you end up with something that looks like you bought it at a candy store.

    This book has beautiful pictures and fun descriptions. I only tried one of the recipes- pâtes de fruits. I had not preread the recipe carefully enough. The list of ingredients called for 3 cups of sugar, but the instructions only called for 2. Also the instructions indicated that the necessary temperature would take 45- 60 minutes to reach, but we got there in about 10. Also, one of the notes was confusing saying that more than one package of pectin might be necessary- one package was more than This book has beautiful pictures and fun descriptions.     This is a really fun book, and the authors' enthusiasm is contagious. That being said, I still don't know if I have the patience for much more than homemade marshmallows. Their instructions are really clear and there are tons of in-the-kitchen pics to guide you. I did wish for a few more pics of the actual candy. I'm not sure this made me a convert to home candy-making; however, if anything can do it this book can. Sad fact is, however, that it is very unlikely that I will ever take the time and effort required to make these delectable goodies, even if the Beer and Pretzel Caramels sound like they could be the best thing ever. But you have a to start a day ahead of time? And you need to reduce a six pack of strong dark ale 1/4 to 1/2 cup?     I was very happy when I won this on Goodreads, it was one i really wanted. Although I have not made any candy yet, I can't wait to start. This book lays it all out for you and entertains at the same time. I did notice one recipe(sea salt caramels) where I think there might be a typo...steps 4 and 5 both tell you to stir in the vanilla paste or extract. Other then that this might become one of my favorite cookbooks and I will have to edit my 4 star rating to 5...Thought I should do some candy ma I was very happy when I won this on Goodreads, it was one i really wanted. I made about six batches of the buttermints to give away at Christmas and they were VERY popular. I also loved the coffee-brown sugar caramels. They offer a good variety of candy types and alternative flavorings. They include some candies I hadn't tried before, like sponge candy, that was also very g I really like this book. The buckeye recipe was so good that a coworker has already asked me for the recipe (the almond flour can be found in bulk at Whole Foods). I can't wait to try some other recipes (e.g. marshmallow). I'm very happy with this book. Hey I can temper chocolate now and I adore this honey and tea lollipop recipe. I can make candy bars like Hershey now... Yea......     loved looking through this book. i would not say that all the recipes are as easy to make as the authors make it sound like. i consider myself a pretty experienced home cook and there were several recipes that i had to try a couple of times before i could get them to come out right. nevertheless i lovef poring over the recipes and am definitely considering adding to my permanent collection.

If you have a sweet tooth, then you shouldn't have any problems finding many different recipes that you will enjoy. There are lots of colorful pictures and the book has a nice layout to it.     I loved this book! So many great ideas and Liz and Jen have such a great humor and passion for candy making! This book was easy to read and easy to understand. I learned lots about candy making, chocolate and sugar. I love all the different variations that come with the 70+ recipes in this book. I can't wait to try all of the tempting candies! I am very likely to buy my own copy (since I got this from the library). Hope my family is ready for a few more calories come next Christmas!     I LOVE THIS COOKBOOK!!! I have made some scrumptious candy lately! The recipes are clear and easy to follow! I love the cross reference by ingredient too! I got this free through Goodreads First Reads progam, but this is a must have cookbook for every kitchen!

    Not my favorite ever, but still very good. If you're into this sort of cooking, then this book is probably awesome. I loved the modern feel and all the pictures. The layout was nice and the recipes detailed. But really I just have two words for you: candy bars. Not my favorite ever, but still very good.     Oh yes, I read a cookbook and salivated over every page. Seth is next in line to read it. As soon as he saw it, he wanted it too. There are step by step directions on all kinds of candies and wonderful tips I never knew.
