    Excellent cookbook. The recipes are not difficult and made with everyday ingredients. The author reviews glass, ceramic, and medal dishes and pans so you can choose the right one for your recipe. This cookbook, paired with a 8x8 pan, would make an outstanding gift.

    I wasn’t expecting a great deal from this, maybe a few ideas I could steal that would involve advanced meal prep and pop it in the oven simplicity; to be clear, the book is not about meal prep, but as everything is designed to cook in an 8x8 dish, it seemed logical... I’ve made several of the recipes, and my family loved them all. Many of these could easily be prepped the day ahead, or morning of. Several of them would also do well to prep and freeze. So far I’ve had and loved: brined, breaded, ba I wasn’t expecting a great deal from this, maybe a few ideas I could steal that would involve advanced meal prep and pop it in the oven simplicity; to be clear, the book is not about meal prep, but as everything is designed to cook in an 8x8 dish, it seemed logical... I’ve made several of the recipes, and my family loved them all. Many of these could easily be prepped the day ahead, or morning of. Several of them would also do well to prep and freeze. So far I’ve had and loved: brined, breaded, baked chicken; Boursin baked mashed potatoes; Italian herb baked meatballs; salami and fresh mozzarella stuffed chicken breasts; and turkey stuffed zucchini boats. Later this week I’ll try the rosemary roasted game hen and grapes.

Recipes bookmarked: * Roasted Cod with Gremolata and Lemony Orzo (37): Parcook 1 C orzo with 2 strips straightforward, unfussy recipes Strahs understands the importance of getting family dinner on the table quickly without sacrificing flavor. Recipes bookmarked: * Roasted Cod with Gremolata and Lemony Orzo (37): Parcook 1 C orzo with 2 strips lemon zest, about 8 minutes. Reserve 1/4 C pasta water. Drain; remove lemon zest. Add to glass/ceramic 8x8 pan and toss with 1 TBSP olive oil. Pour over the 1/4 C reserved pasta water. Season 1 lb cod filets with salt and pepper. Put on top of orzo. [Strahs suggests putting the gremolata on the cod before baking, but I would top the cod off at the end so the flavors stay brighter.] Cover with foil and bake at 400* for ~20 minutes, or until orzo and fish are done. * Hot Smoked Salmon, Spinach, and Herbed Goat Cheese Phyllo Pie (39): Beat together 5 oz room temperature goat cheese, 1 TBSP chopped fresh dill, 1 TBSP chopped fresh chives, and 1 TBSP chopped fresh parsley. Line an 8x8 pan with parchment paper, then with 2 sheets of phyllo dough (halved, so you have 4 rectangles). Brush with olive oil. Spread goat cheese over phyllo. Flake 8 oz of hot smoked salmon filets over the goat cheese. Scatter 1 C frozen chopped spinach (thawed/drained completely) over the salmon. Top with 2 sheets of phyllo dough (halved, so 4 rectangles); brush with olive oil. Bake at 400* for ~20 minutes. Let cool a bit before serving. * Kale, Mushroom, and Onion Gratin (55): Saute in 2 TBSP butter, 6 C chopped kale, 1 C sliced onion, 8 oz sliced mushrooms, and salt. Cook until all veggies are soft. Warm 2 C milk and set aside. Saute 2 minced garlic cloves in 2 TBSP butter, then make a roux with 2 TBSP flour. Stir in warm milk; cook until thickened. Whisk in 1/2 C grated Asiago, salt + pepper, and a pinch of nutmeg. Stir in veggie mixture. Pour into glass/ceramic 8x8 pan. Top with 1/4 C grated Asiago. Stir together 1 TBSP melted butter and 2/3 C panko; top dish. Bake at 400* for ~15 minutes, or until bubbly and golden brown. * Pumpkin Cheesecake Swirl Blondies (129): Beat together 8 oz softened cream cheese, 1/4 C sugar, 1 egg, and 1 tsp vanilla. Set aside. Beat together 1/2 C melted butter and 1 C brown sugar, then stir in 1/4 C pumpkin puree, 1 egg, and 2 tsp vanilla. Separately, whisk together 1 C flour, 1/2 tsp cinnamon, 1/4 tsp ginger, 1/4 tsp nutmeg, and 1/4 tsp salt. Add dry to wet, then mix until combined. Pour all but ~1/2 C blondie batter into a parchment-lined glass/ceramic 8x8 pan. Spoon on cheesecake topping and spread evenly. Plop remaining blondie batter around the pan; swirl. Bake at 325* for ~40 minutes, or until a toothpick comes out clean. Let cool in pan before removing.
