This would be a really useful guide for people who don't already know much about the topic, or for athletes who want to explain to coaches or family members why vegetarianism is a good choice. I was a little surprised at the recipes. This is a very practical cookbook for people who are trying to juggle a busy lifestyle and be healthy. Most of the recipes in it have no more than 7 ingredients in them, and they are all easy to find in the supermarket (you won't need to go to any special health food store). Anita's risotto recipe, halloumi salad and mediterranean soup have become favourite midweek meals for me. Everything I have made from this book has come out well (and I am by no means a seasoned chef). It is not overburdened with science, there is just an introduction at the beginning of the book and then the nutritional value - protein content, sugars, fat, calories etc. tagged on to the end of each recipe for people who are tracking macros I guess. It's refreshing to find a cookbook for vegetarians that isn't some instagram star flashing their abs and filling a book mostly of photography and variations of the same overnight oat recipes and smoothie bowls.

The recipes are all really tasty and the book includes a 50-page intro with an in-depth discussion of nutrition and where to get all the nutrients needed if you're a vegan or vegetarian. I particularly enjoyed that section as it offers a really balanced views of the pros and cons of eating meat, all backed by scientific studies that are clearly outlined and referenced. The author has a BSc in nutrition and was a professional weight lifter, winning the British bodybuilding Champ A brilliant book! Anita Bean has done an outstanding job with The Vegetarian Athlete's Cookbook. We have vegetarians in our immediate household and some meat eaters also. Anita lists the benefits of a Vegetarian Diet and they are all true. It is healthier. Our heart disease, high blood pressure, type 2 diabetes, and obesity are under control. We certainly feel better, look better and are committed to this diet. The meat eaters in our family actually like eating with us because they eat less meat and more healthy Anita Bean has done an outstanding job with The Vegetarian Athlete's Cookbook. Besides the delicious recipes there is a nicely written and educational Vegetarian Sports Nutrition Guide. The cookbook also talks about the pitfalls of a Vegetarian Diet and what you need to get a balanced diet. You will find the charts very helpful. I made several of the recipes before writing this review. There are many breakfast entries and we tried the Blueberry Porridge as well as the Egg and Avocado Toast (both are highly recommended). There are many soup recipes. We tried the Red Lentil and Vegetable Soup which was delicious. There are many salad recipes. We tried the Chickpea And Roasted Pepper Salad With Walnuts which was very good. There are many main meal recipes. We tried the Spicy Chickpea And Spinach Stew which we absolutely loved. We happen to have a large bag of Organic Chickpeas in the house that we bought at Costco and we weren't quite sure what to do with all of them. Now we have many great tasting recipes in Anita Bean's cookbook. There are many Dessert recipes. We made the Blueberry Tofu Cheesecake which is going to be a regular revolving dessert available in our home. There are many Sweet Snack recipes. We haven't tried one yet but we will. We want to make the Recovery Bars, Super Oat Bars and more. The cookies also look good. There are many Savory Snacks, Shakes and Smoothies. We just bought a Vitamix Blender at Costco so now we have more recipes to make thanks to this cookbook. There are many beautiful pictures for the recipes so you will know what your final product should look like. I won this cookbook from GoodReads First Reads. I appreciate so much winning this book and I highly recommend that you buy, gift, but most importantly buy this cookbook, read the contents, make some recipes, and enjoy. I know you will feel much healthier like we do.
