I gave this book 3 stars for some of the veggie recipes. Even though it’s called The Healthy Air Fryer Cookbook: Truly Healthy Fried Food Recipes..., that “healthy” mainly means the old grain based food pyramid and reduced fat. If you’re diabetic and trying to reduce glucose levels, or if you eat Paleo or any of the low carb diet options, or if you’re Gluten Free this is not the book for you. There are tons of carbs here. Bread, bread, bread. And no whole eggs. For example, I got excited when I I gave this book 3 stars for some of the veggie recipes. Bread, bread, bread. And no whole eggs. For example, I got excited when I saw the Mini Chicken Meatballs in the Appetizer section. Meatballs make great snacks for my high school kids on the go. However, when I actually looked at the list of ingredients, I saw 2 vanilla wafers were the binding ingredient. Why put sugar in a place that it’s not needed? If we’re going to have sugar, we’re going to make it count - a dessert or chocolate. No guerrilla sugar. No thanks. I’ll use the techniques, times, and temps as a guide to make a truly healthy (for us) version. To be fair, there’s a Spicy Chicken Meatballs recipe in the Chicken section that uses almonds as the binding agent along with a whole egg (can you believe it?). I expected so much more from this book due to the title. More vegetables. Less Bread. After scrolling through recipe let down after let down, I wanted to just toss it. I didn’t really expect the recipes to be low carb per se, but I didn’t expect the first third of the book to be so heavy with bread, English muffins, etc. There may be some use here for low carb-ers if you’re willing to dig and get creative, though.
