    I got an Electric Smoker for Christmas, and this book with it--it seems to work and the recipes are pretty goshdarn easy and appetizing.

    Lots of photos, but there aren't enough recipes (reasonable for common folks). Too many kinds of foods that I wouldn't eat (even if I could find them!): duck, venison. However, it is still a good enough for inspiration, with some good tips on types of wood to use, and the importance of temperature rather than just timing that big hunk of beef. I was not crazy about the little packet of recipes that came with it so I was eager to look over Bill West's "The Complete Electric Smoker Cookbook" I figured with over a hundred recipes there had to be something that appealed. I was right. I enjoy cooking and have been for over forty years, but the idea of actually smoking my food is still relatively new to me. I was pleased to find these recipes concise and easy to understand. Some involve more prep time than others, but all are easy to follow. Just remember rule number one about trying a new recipe, read it not once, but twice. First to see if you understand it and the second to insure you have everything to prepare the dish. As I was growing up if we desired smoked meets we went to a farm about 20 miles away and ordered it & picked up it a few days later. Now I can pull out my trusty smoker and have it any time I want. During the holidays there are so many family gathering with huge amounts of left overs that it is a good way to use them up. The only difference is you are infusing already cooked meats with the flavor. On the other hand you can buy a ham, chicken, turkey breast or fish and also start from a fresh product too. Being raised by a mother who loved chicken and a father who preferred beef those are the two meats I usually go to for main courses. My family has a lot of hunters that have married into it over the years so I have broadened my horizons to include deer, elk, rabbit, duck and even alligator meat as well. This Cookbook will guide you through the temps to cook them at, how long and suggest what wood to use. Mr. West has worked very hard to make it easy for you. I suggest you try the orange chicken. It has a light subtle smoke flavor and the process infuses the meat more with the orange flavor I think. Plus it is a lot easier than frying and roasting and the placing in the oven for a couple of hours before serving. I made it for my birthday dinner last night. Makes a great sandwich when you use cranberry relish as a spread. You could spend days working with these recipes which also include sauces, toppings and other condiments and side dishes to compliment them. The possibilities are endless. "The Complete Electric Smoker Cookbook" is totally with your time and money. Get those smokers ready you are going to be busy.
