    This extremely informative and comprehensive cookbook adapts traditional Mediterranean recipes to the Instant Pot and Air Fryer and gives busy cooks a way to cut the prep time in half or even more. The book starts out with an explanation of the Mediterranean area geographically and culturally. Then the author also provides valuable instructions on using and caring for the Instant Pot and Air Fryer. Another thing I loved about this book is that some of the lesser-known spices and ingredients are This extremely informative and comprehensive cookbook adapts traditional Mediterranean recipes to the Instant Pot and Air Fryer and gives busy cooks a way to cut the prep time in half or even more. The book starts out with an explanation of the Mediterranean area geographically and culturally. Then the author also provides valuable instructions on using and caring for the Instant Pot and Air Fryer. Another thing I loved about this book is that some of the lesser-known spices and ingredients are defined and explained. While some of these may not be in our US-based chain grocery stores, I got mine from an international spice store in town. If you don't have one of those, Amazon has everything. The recipes that follow are a broad range of different offerings from the many and varied cultures of the Mediterranean. There is a fantastic tzatziki recipe, The Fasolakia (Braised Green Beans with Tomato) caught my eye because my tomato garden has produced a lot this year, and this is a fantastic way to use them. Same with the Goat Cheese Stuffed Tomatoes, which will happen soon. The Stuffed Cabbage, Chicken and Chorizo Paella, and Chicken Tangine all look fantastic. This book tells you how to make homemade ricotta and yogurt in your Instant Pot. The recipe for granola with homemade yogurt looks fantastic. For the Air Fryer recipes, Chicken Piccata and Chicken Schwarma stand out. This book is a comprehensive look at Mediterranean cuisine of all cultures and regions. If you use the Instant Pot and Air Fryer regularly, this is a must-have on the shelf. I received a free copy of this book from the publishers via Netgalley. My review is voluntary.

    This is a lovely Mediterranean cookbook to make use of your IP or air fryer. Unfortunately, it's not one that's a good fit for me at all, but others are likely to really enjoy it. It has very authentic recipes with gorgeous photos. I wish there were a lot more photos (about 1/4 to 1/3 of the recipes seem to have photographs) but it is the lack of nutritional information that makes it a cookbook that I really can't use. So many people need to monitor their calories, fats, carbs, protein, fiber, s This is a lovely Mediterranean cookbook to make use of your IP or air fryer. Unfortunately, it's not one that's a good fit for me at all, but others are likely to really enjoy it. It has very authentic recipes with gorgeous photos. I wish there were a lot more photos (about 1/4 to 1/3 of the recipes seem to have photographs) but it is the lack of nutritional information that makes it a cookbook that I really can't use. So many people need to monitor their calories, fats, carbs, protein, fiber, sugar and/or sodium levels these days that it's maddening to me when publishers do not include this information. For those on special diets, this cookbook will work somewhat well. While the author talks about how little meat is used in traditional Mediterranean dishes, she does make use of a lot of animal products. Wheat is used sometimes but gluten free folks can find plenty of dishes without it or that can be substituted. Keto, low-carb and vegan folks won't find much that will work for them, while paleo folks can find enough dishes that will work to make it worth a look (though it uses a lot of beans and grains). While the recipes do make use of time-saving devices, most of the recipes seem a little more on the gourmet side to me and may not work the best for cooks in a hurry. Kids and folks used to the Standard American Diet aren't likely to enjoy a lot of the dishes or may need some time adjusting. They do seem largely healthy and diverse in tastes. The cookbook won't work for me because of dietary issues but I also just was not really personally compelled by any of the recipes even though I generally like Mediterranean dishes. That's me though, and others are likely to really love this cookbook. I read a temporary digital ARC of this book via NetGalley.

There are a wealth of recipes included in this book that are from quite a few Mediterranean countries, including Greece, Egypt, and Lebanon. I do not have an instant pot and as most of the recipes were instant pot recipes I decided to gift this to my sister who does have an instant pot (after taking a pic of some of the air fryer recipes I was interested in.

I felt this cookbook was well written and can't wait to try some of the dishes! Also, I am glad that it wasn't another Mediterranean cookbook that ONLY uses salmon for the proteins. The meals include lamb, chicken, and beef. I was pleasantly surprised.

    I was a bit disappointed that not all recipes are for the electric cooker or air fryer. Even though all recipes are scrumptious, some are really intimidating. This is a book for someone already familiar with using their appliances and cooking Mediterranean dishes. The few pictures in the book are beautiful, even though I wish there had been more of them. This book makes me want to accept the challenge to tackle my pressure cooker and air fryer and get better at cooking the dishes! I absolutely lo I was a bit disappointed that not all recipes are for the electric cooker or air fryer. Even though all recipes are scrumptious, some are really intimidating. This is a book for someone already familiar with using their appliances and cooking Mediterranean dishes. The few pictures in the book are beautiful, even though I wish there had been more of them.     This is easily the best instant pot/air fryer cookbook I’ve read! And believe me I’ve read many many of them. These recipes are not your same Mediterranean recipes with a different twist. They are interesting and accessible recipes. Each recipe is well written out and easy to follow. And oh my goodness the pictures are GORGEOUS and made my mouth water. The recipes are well written and understandable by cooks of all levels and the photos make the food very appealing to myself and other lovers of food out there. What I especially love about the book is that it uses mostly whole ingredients instead of pre-prepared and packaged foods. I do draw the line at making my own cheese beyond a quickly-made mozzarella, and canning tomatoes but the more "ingredients" you use the better. My one nephew says that I never have any food in my house, only ingredients --- that is why I cook so much. I also refuse to eat or cook with Frankenfoods such as "chick'n" and its 88 ingredients vs. 🐔chicken🐔 having one and cheese that does not come from an animal is udder nonsense!) As always, I try to find a reason to not rate with stars as I simply adore emojis (outside of their incessant use by "🙏-ed Social Influencer Millennials/#BachelorNation survivors/Tik-Tok and YouTube Millionaires/snowflakes / literally-like-overusers etc. " on Instagram and Twitter... Ingredient measurements are supplied in American measurements only. There's a conversion chart for metric measures in the appendices. The nutritional information is not included. Extra tips and recipe alternatives are listed in sidebars with the recipes. The recipes themselves are fairly straightforward and are made with (mostly) easily sourced ingredients. Many are very simple, none of them are overly complex. The recipes are drawn from a wide variety of Mediterranean cuisines and it was really nice to see Moroccan and other Northern African recipes included. The loubia soup recipe was delicious and warming, and I've made it a couple of times since my initial review attempt. The photography is not abundant; about 20% of the recipes include a photo, but the photographs which are included are clear and well done. I wish there had been more photographs and serving suggestions, but I do understand that extra photography increases the price of book projects very quickly. Four stars.     There are numerous cookbooks devoted to the  cooking method using the Instapot. This one is devoted to a specific cuisine, Mediterranean, one of my favorites. It includes both familiar and  lesser known countries such as Italy, Greece, France, Egypt, North Africa and Lebanon. I really appreciated the distinction between the Mediterranean Diet and Mediterranean cooking. I'm not on a diet, just love to eat! The ingredient list was helpful and I enjoyed learning new words such as Masabacha, Baharat There are numerous cookbooks devoted to the  cooking method using the Instapot. This one is devoted to a specific cuisine, Mediterranean, one of my favorites. It includes both familiar and  lesser known countries such as Italy, Greece, France, Egypt, North Africa and Lebanon. I really appreciated the distinction between the Mediterranean Diet and Mediterranean cooking. I'm not on a diet, just love to eat! The ingredient list was helpful and I enjoyed learning new words such as Masabacha, Baharat and matbucha. I would certainly refer back to this as a reference. My Mother has used a pressure cooker, the old type with a round thingy on top to release the air, for decades. It scared me to death everytime she did. Maybe I can venture into using an instant pot with the recipes and techniques in this lovely cookbook. The techniques and recipes were well organized, wish there were more pictures, I like to visualize what the final dish should look like, especially new and unfamiliar recipes. The soup, stews and stocks section was definitely my favorite. Lots of beans, lentils and other staple recipes included. There were quite a lot of steps and time involved in some of the recipes, would be for a more advanced home cook not a beginner. There are even suggestions for dishes to serve alongside many of the recipes. There are thoughtful, informative comments about where the recipes originate from, traditions and updates to old recipes. Mediterranean food was not part of my heritage so, a cookbook like this is a tremendous aide for me to prepare the food I love to eat. I'm not interested in an air fryers and didn't focus much on that section.     I recently became interested in the Mediterranean diet due to its focus on vegetables and unprocessed foods so you can say I was excited to see Instantly Mediterranean melded this diet with the beloved Instant Pot. Immediately, the layout caught my eye. The section covers highlight the Mediterranean feel, and the pages are clean and minimal. I do wish there were more photos as the ones included are beautiful and lure you into wanting to make those specific recipes. I'm also unfamiliar with ma I recently became interested in the Mediterranean diet due to its focus on vegetables and unprocessed foods so you can say I was excited to see Instantly Mediterranean melded this diet with the beloved Instant Pot. Immediately, the layout caught my eye. The section covers highlight the Mediterranean feel, and the pages are clean and minimal. I do wish there were more photos as the ones included are beautiful and lure you into wanting to make those specific recipes. I'm also unfamiliar with many of these recipes and had to Google them for photos to get an idea of what it should look like. I tested a couple of the recipes - the Avgolemono Soup with Chicken and Chicken Sofrito. The Avgolemono Soup was easy to follow and tasted light and refreshing. The Chicken Sofrito was more difficult. I followed the directions to a tee, and the chicken and potatoes kept sticking to the pot and caused a burn message multiple times, even after scraping the brown bits and having enough liquid. That said, it was still delicious! I was a bit turned off by the lack of nutrition information and time expected to make the recipe. I use both of these to plan out my meals for the week and felt I was going in blind with these missing. After eating one serving of the Chicken Sofrito, I was shocked to see it was over 1,000 calories once I plugged it into my food tracking app. Overall I rate this book a 3.25 based on what I experienced so far, but I think I need to try more to give it a fair rating. I have the Ratatouille and Fried Potatoes with Smoked Paprika Aioli cued up next and am looking forward to updating my rating. One thing's for sure, if you're into the Mediterranean diet and looking to get more use out of your Instant Pot or Air Fryer, this book will help you do that! Geared towards cooking in an Instant Pot, electric pressure cooker, and an air fryer (most recipes are for the first two), Paster presents cuisine from all along the Mediterranean coast, ranging from savory familiar French dishes such as ratatouille to Lebanese fattoush to Israeli cheesecakes. Gorgeous photos accompany the recipes throughout. Seldom do I come across a cookbook in which every single recipe is appealing, but I have to say that Emily Paster's Instantly Mediterranean is such a book. Geared towards cooking in an Instant Pot, electric pressure cooker, and an air fryer (most recipes are for the first two), Paster presents cuisine from all along the Mediterranean coast, ranging from savory familiar French dishes such as ratatouille to Lebanese fattoush to Israeli cheesecakes. Gorgeous photos accompany the recipes throughout. It's important to note that this cookbook's focus is on the cuisine of Mediterranean nations, rather than the Mediterranean diet, which has become increasingly popular. I'd highly recommend this book to anyone interested in this particular cuisine, but don't peruses while hungry, because everything looks delicious and you'll have a lengthy grocery list in no time! Recipes seem easy to follow and of course, the use of the appliances Paster designed them for makes prep and cook time a breeze. Most of the recipes require at least an intermediate level of cooking knowledge. Many of the recipes also have challenging ingredients to find in a standard grocery store—much less an average pantry. The food, though, is filled with an international flair. The Mediterranean is much more than just Italy, France, and Greece so the variety is a pleasant surprise. Another positive is that almost all of the recipes include a photograph of the completed dish. My only disappointments are the complete lack of nutritional information and allergen warnings. If you are an accomplished home chef who wants to broaden their repertoire, Instantly Mediterranean is a great way to do it. These recipes will impress anyone’s mother-in-law or rich friends.     I am a dedicated Instant Pot user, so I was excited to get a copy of this cookbook. With a husband from Spain and a love of Italian food, I am very familiar with some Mediterranean cooking, but less so with other parts of the region, so I appreciate the history of food in the region provided in the introductory chapter of this book. There is also a list of suggested food items and accessories to stock in your kitchen in order to capture more authentic flavors. The author also thoroughly explains I am a dedicated Instant Pot user, so I was excited to get a copy of this cookbook. With a husband from Spain and a love of Italian food, I am very familiar with some Mediterranean cooking, but less so with other parts of the region, so I appreciate the history of food in the region provided in the introductory chapter of this book. There is also a list of suggested food items and accessories to stock in your kitchen in order to capture more authentic flavors. Some of my favorite recipes were the Pumpkin & Lentil Soup with Dukkah, the French Lentil Salad with Walnuts & Feta (so easy to prep and it makes a wonderful lunch), the Corn, Tomato, & Zucchini Pashtida (Israeli Crustless Quiche), and the Vegetable & Chickpea Tagine with Pickled Raisins.. With a family member who doesn't eat meat, I appreciated the author including options to make a dish vegetarian.. This cookbook is filled with delicious recipes that are easy to make, so it's a win-win.

    This book is great if you have both a pressure cooker and an air-fryer of some kind. The recipes are easy to follow. The ingredients are easy to source(your local cultural market and even some grocery stores will have the seasoning blends you need). I've never branched out into making yogurt but the Vanilla Yogurt Parfaits with Honey Pistachio Granola made it easy and tasty. We love dips in our house and that was my favorite chapter. However, Emily Paster's writing invites recipe perusers like me to actually sit down and read her interesting text. I loved the inclusivity of Mediterranean foods included. From Spanish tapas to Greek and Lebanese cuisine, there is so much variety. Accordingly, there are specialty ingredients required for many of the recipes, so this is not going to be an "oh crap, I need to make dinner right now" kind of cookbook. That said, Paster does highlight a couple of recipes that can be made from pantry ingredients. My only quibble is in the layout-- I like having photos of the recipes with the recipes themselves, rather than on preceding or following pages. I look forward to cooking my way through the Mediterranean with Paster's helpful tips to guide me. Disclosure: I was a recipe tester for two of the recipes included in this book.     While I like to look at Mediterranean cookbooks it’s not a favorite food of mine. This book acts on more cultural foods with an authentic feel using air fryer, instant pot, or a pressure cooker. What did I like? Hummus anyone? That is the only Mediterranean food I can really get behind. I would love to stay there for a few weeks and really try the food. The book has some stunning pictures but sadly not a picture for every recipe. Instantly Mediterranean explores recipes that can be prepared in the Instant Pot and air fryer, two of the hottest appliances currently on the market. There's a nice array of recipes, including a vegetarian section, and the convenience of using appliances, particularly the Instant Pot, saves a lot of time and work, particularly for those dishes that evoke hours spent over a stovetop letting flavors meld together. Instantly Mediterranean explores recipes that can be prepared in the Instant Pot and air fryer, two of the hottest appliances currently on the market. There's a nice array of recipes, including a vegetarian section, and the convenience of using appliances, particularly the Instant Pot, saves a lot of time and work, particularly for those dishes that evoke hours spent over a stovetop letting flavors meld together. While the recipes themselves are fairly simple, they are higher maintenance in terms of ingredients, particularly for those who may not easily be able to source Mediterranean ingredients, but for those who have ready access, there's a lot of delicious options to try.

The recipes in the book so far have taught me to be more inventive with my gadget cooking while guiding me on tour throughout the entire Mediterranean - not just southern Europe. One of my favorite recipes is the olive oil mashed potatoes. While my potatoes cooked, I steeped rosemary and garlic in olive oil to flavor them as per the directions. Recipes from starters to light meals , to full course dinners and desserts are present and accounted for in French, Spanish, Moroccan, Turkish cuisine. Easy instructions, definitions of possibly unknown ingredients and background for each recipe make this cookbook a must have. this well written , detailed cookbook will make you rethink "Mediterranean Cooking".     This is the most inclusive Mediterranean cookbook that I have ever seen. I really enjoyed the representation of countries that don’t always get put into Mediterranean, most cookbooks focus on France and Italy.     This is a great cookbook. I like that the beginning has ingredients to keep in the pantry as well as the tools that can be used/how to use them. The pictures are beautiful but I wish there were more. The recipes look delicious and I can’t wait to try the seafood paella!
